Delicious Food, Fantastic Beer Pairings at the Kimpton Armory Hotel in Bozeman!

We recently had the honor of attending a six-course pairing dinner at Fielding's, the restaurant at the new Kimpton Armory Hotel in Bozeman, MT.  It was the first in a series of events that will pair the restaurant's bold, complex cuisine with local partners.

About 100 guests at the hotel's Fielding's Restaurant were feted and fed by Chef Mark Musial's elaborate preparations of everything from honey-cured salmon to an odd, but refreshing dessert of a craft beer-ice cream float. There is no doubt that attendees departed well-fed and well-educated on the evening's gastronomic and craft beer pleasures.  And the best part of all was that a significant amount of the proceeds - $4100 in all - went to Greater Gallatin United Way, showing that the Kimpton Armory Hotel is as devoted to helping the larger community as it is to providing great food, drink and lodging. 

Bozeman Brewing Company, represented by Mark Bergstrom, provided a beer pairing with each of the six courses with amazing craft ingredients, everything from ginger to cherry to gin botanicals. Bozeman Brewing Company now produces 6000 barrels of beer a year, with a seemingly endless craft mixology of thoughtful, even experimental ingredients.

Mmm,  yumThe meal featured delicious and creative plates like a compressed melon and tomato salad with ginger mint coulis paired with Bozeman Brewing Company's Andsoit Gose Ginger 2019.  There was also juniper and honey cured slamon with red onion and thyme paired with Sprig & Spritz Aged Gose with Gin Botanicals 2019.  But the final savory course may have been the most tempting of all: a braised oxtail served with potato puree and crispy chili, with some fantastic Metamorphic Flanders Style Red with Cherry.  For dessert: a mango and passion fruit "float" featuring Sauerlich Berliner Weisse!

Chef Mark Musial of Fieldings says that his "goal in designing this menu was to provide an elevated, yet approachable experience that showcases the flavors that guests can expect when dining at Fielding's, while creatively partnering with Bozeman Brewing Company for distinctive pairings."  

In addition to Fieldings, the Kimpton Armory Hotel also features a basement bar concept called Tune-Up.
